Creamy Lentil & Tomato Soup with Green Salad

Red lentils (preferably soaked for 3–5 hours)70 g
Carrot50 g
Onion40 g

Instructions

Finely chop onion and carrot and stew for about 5 minutes with a little water or oil.

Add garlic, lentils, and tomatoes.

Pour in about 700 ml of water.

Add curry, turmeric, and black pepper.

Simmer for 18–20 minutes until lentils are tender.

Blend the soup until smooth and creamy.

Serve with a fresh salad made of leafy greens and cucumber.
